Shrimp Linguini Alfredo

Ingredients:

  • 1 (12 ounce) package linguine pasta
  • 12 ounces of small or medium shrimp, tail off (although shrimp tails are edible and a personal preference), peeled and deveined. You can use either fresh or frozen but frozen shrimp must be thawed overnight in a refrigerator for at least 10 hours, and refreshed by lightly rinsing with cold water, before seasoning and cooking.
  • 4 sprigs fresh parsley
  • 4 slices lemon, for garnish
  • Olive Oil
  • 1 tablespoon buttter
  • 2 tablespoons smoked paprika (optional)
  • 2 tablespoons garlic powder (optional)
  • 1 tablespoon onion powder (optional)
  • ½ teaspoon cumin (optional)
  • 4 teaspoons minced garlic
  • 1 (16.9 ounce) jar of Trader Joe’s (Giotto's) Alfredo Pasta Sauce or 1 (15 ounce) jar of Rao’s Homemade Creamy Alfredo Sauce

It tastes even better to make your own Alfredo Sauce from scratch. If you wish to do that instead of buying a jar of Alfredo Sauce, add:

  • ½ cup butter, melted
  • 1-½ cups of heavy whipping cream
  • 2 teaspoons minced garlic (in addition to the 4 teaspoons used when sauteing the shrimp)
  • ½ teaspoon of Italian Seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 cups freshly grated Parmesan cheese

Preparation:

  1. Cook pasta in a large pot of boiling water until al dente; drain.
  2. Meanwhile, heat the Alfredo Sauce in a large skillet or, if you are making your own Alfredo Sauce, add the butter and cream to a large skillet and simmer over low heat for 2 minutes. Whisk in the garlic, Italian seasoning, salt, and pepper for one minute. Whisk in the parmesan cheese until melted.
  3. Toss the shrimp with seasonings in a bowl. Seasonings can include smoked paprika, garlic powder, onion powder, and cumin as preferred. Heat olive oil in a skillet on medium high heat and sautee the shrimp with 4 teaspoons minced garlic for 1 to 2 minutes per side, cooking until just opaque and cooked through. The biggest mistake people make with shrimp is overcooking it, which makes it tough. Cook shrimp just enough so it’s tender and juicy. Add butter and baste the shrimp with the butter as it melts. Add your shrimp into the sauce.
  4. Place pasta in a serving dish, and cover with the shrimp sauce. Sprinkle with black pepper and Parmesan cheese. Garnish with parsley and lemon slices.
